For the Zucchini Bread:

  • 2 medium zucchinis, grated
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

For the Orange Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • Pinch of salt

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.

Step 2: Prepare the Zucchini

  • Grate the zucchinis using a box grater or food processor. Squeeze out any excess moisture from the zucchini using a clean kitchen towel or paper towels. Set aside.

Step 3: Mix the Wet Ingredients

  • In a large bowl, whisk together the eggs, sugar, oil, and vanilla extract until smooth.

Step 4: Combine the Dry Ingredients

  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

Step 5: Combine the Wet and Dry Ingredients

  • Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6: Add the Zucchini and Walnuts

  • Fold in the grated zucchini and chopped walnuts (if using). The batter will be thick.

Step 7: Bake the Zucchini Bread

  • Pour the batter into the prepared loaf pan and spread it out evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 8: Make the Orange Cream Cheese Glaze

  • While the bread is cooling, prepare the glaze. In a bowl, beat the softened cream cheese with a hand mixer or whisk until smooth.
  • Add the powdered sugar, orange juice, orange zest, and a pinch of salt. Mix until the glaze is smooth and creamy.

Step 9: Glaze the Zucchini Bread

  • Once the zucchini bread has cooled completely, spread the orange cream cheese glaze over the top. Slice and serve!

Notes

  • Use fresh zucchini for the best flavor and texture.
  • Make sure to drain the zucchini well to prevent the bread from becoming too soggy.
  • If you don’t have walnuts, feel free to swap them with other nuts like pecans or almonds, or skip them entirely for a nut-free version.
