For the Lasagna Layers:

  • 12 lasagna noodles, cooked according to package instructions
  • 3 cups cooked chicken, shredded or diced
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups ricotta cheese or cottage cheese

For the White Sauce:

  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 4 cups whole milk or chicken broth (or a mix of both)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 teaspoon Italian seasoning (optional)

Optional Additions:

  • 1 cup spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the White Sauce

  1. In a medium saucepan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes until golden and bubbly.
  3. Gradually pour in the milk (or broth) while whisking constantly to prevent lumps.
  4. Add garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until the sauce thickens. Remove from heat and set aside.

Step 2: Layer the Lasagna
5. Preheat your oven to 375°F (190°C).
6. Spread a thin layer of white sauce at the bottom of a greased 9×13-inch baking dish.
7. Layer 3-4 lasagna noodles on top of the sauce.
8. Spread 1/3 of the ricotta cheese, 1 cup of shredded chicken, a handful of spinach (if using), and 1/3 of the mozzarella and Parmesan cheese over the noodles.
9. Pour 1/3 of the white sauce over the layer.

Step 3: Repeat and Finish
10. Repeat the layering process (noodles, ricotta, chicken, spinach, cheese, and sauce) two more times.
11. Finish with a final layer of noodles, white sauce, and a generous sprinkle of mozzarella and Parmesan cheese on top.

Step 4: Bake the Lasagna
12. Cover the baking dish with foil and bake for 25 minutes.
13. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.

Step 5: Rest and Serve
14. Let the lasagna rest for 10 minutes before slicing to allow it to set. Garnish with fresh parsley and serve warm.

  • Use Rotisserie Chicken: For a quick and flavorful option, use pre-cooked rotisserie chicken.
  • Experiment with Cheese: Add a touch of Gruyère or fontina for a gourmet twist.
