Ingredients
For the Lasagna Layers:
- 12 lasagna noodles, cooked according to package instructions
- 3 cups cooked chicken, shredded or diced
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups ricotta cheese or cottage cheese
For the White Sauce:
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 4 cups whole milk or chicken broth (or a mix of both)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 teaspoon Italian seasoning (optional)
Optional Additions:
- 1 cup spinach, chopped
- 1/2 cup mushrooms, sliced
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare the White Sauce
- In a medium saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for 1-2 minutes until golden and bubbly.
- Gradually pour in the milk (or broth) while whisking constantly to prevent lumps.
- Add garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until the sauce thickens. Remove from heat and set aside.
Step 2: Layer the Lasagna
5. Preheat your oven to 375°F (190°C).
6. Spread a thin layer of white sauce at the bottom of a greased 9×13-inch baking dish.
7. Layer 3-4 lasagna noodles on top of the sauce.
8. Spread 1/3 of the ricotta cheese, 1 cup of shredded chicken, a handful of spinach (if using), and 1/3 of the mozzarella and Parmesan cheese over the noodles.
9. Pour 1/3 of the white sauce over the layer.
Step 3: Repeat and Finish
10. Repeat the layering process (noodles, ricotta, chicken, spinach, cheese, and sauce) two more times.
11. Finish with a final layer of noodles, white sauce, and a generous sprinkle of mozzarella and Parmesan cheese on top.
Step 4: Bake the Lasagna
12. Cover the baking dish with foil and bake for 25 minutes.
13. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
Step 5: Rest and Serve
14. Let the lasagna rest for 10 minutes before slicing to allow it to set. Garnish with fresh parsley and serve warm.

- Use Rotisserie Chicken: For a quick and flavorful option, use pre-cooked rotisserie chicken.
