For the Chicken Patties:

  • 1 lb ground chicken
  • ½ cup shredded white cheddar cheese
  • 1 cup fresh spinach, finely chopped
  • ¼ cup breadcrumbs (or almond flour for low-carb)
  • 1 egg
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • 1 tablespoon Dijon mustard

For the Burger Assembly:

  • 4 brioche or whole wheat burger buns
  • 4 slices white cheddar cheese
  • ½ cup mayonnaise (or Greek yogurt)
  • 1 tablespoon Dijon mustard (for sauce)
  • 1 teaspoon lemon juice (for sauce)
  • Sliced tomatoes
  • Lettuce or arugula
  • Red onion slices

Instructions

Step 1: Make the Chicken Patties

  1. In a large bowl, mix ground chicken, shredded white cheddar, chopped spinach, breadcrumbs, egg, garlic, salt, black pepper, paprika, onion powder, and Dijon mustard.
  2. Gently form into 4 equal patties, about ½ inch thick.

Step 2: Cook the Burgers

Grill Method:
3. Preheat grill to medium-high heat (about 375°F).
4. Cook patties for 5-6 minutes per side, until the internal temperature reaches 165°F (75°C).

Skillet Method:
5. Heat 1 tablespoon olive oil in a skillet over medium heat.
6. Cook patties for 5 minutes per side, until golden brown and fully cooked.

Oven Method:
7. Preheat oven to 400°F (200°C).
8. Bake patties on a parchment-lined baking sheet for 18-20 minutes, flipping halfway through.

Step 3: Toast the Buns & Assemble

  1. Lightly toast burger buns on the grill or in a skillet.
  2. In a small bowl, mix mayonnaise, Dijon mustard, and lemon juice to make the sauce.
  3. Spread sauce on each bun, then layer with lettuce, tomato, chicken patty, extra white cheddar, and red onion.

Step 4: Serve & Enjoy!

  1. Serve warm with sweet potato fries, a side salad, or coleslaw!

Notes

Don’t Overmix the Meat – Keeps the patties tender and juicy.
For Extra Flavor – Add a teaspoon of Worcestershire sauce to the mixture.
Melt Extra Cheese on Top – For an ultra-cheesy burger experience.
Use Quality Buns – Brioche or whole wheat buns add great texture and flavor.
