Ingredients
For the Pancakes:
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk (or regular milk with 1 tsp vinegar)
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
For the Caramelized Pineapple Topping:
- 1 can pineapple rings, drained (or fresh pineapple, sliced)
- 2 tablespoons butter
- 2 tablespoons brown sugar
- ½ teaspoon cinnamon (optional)
- Maraschino cherries (for garnish, optional)
Instructions
Step 1: Prepare the Pancake Batter
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract.
- Gradually mix the wet ingredients into the dry ingredients until just combined (don’t overmix!).
Step 2: Caramelize the Pineapple
- Heat a nonstick skillet over medium heat and melt butter.
- Stir in brown sugar and cinnamon, letting it melt and bubble.
- Place pineapple rings in the skillet and cook for 1-2 minutes per side, until golden and caramelized.
Step 3: Cook the Pancakes
- Place a caramelized pineapple ring onto the skillet and immediately pour ¼ cup pancake batter over it.
- Cook for 2-3 minutes, until bubbles form on the surface.
- Flip and cook for another 1-2 minutes, until golden brown.
Step 4: Serve & Enjoy!
- Stack pancakes and top with extra pineapple syrup, butter, and maraschino cherries.
- Serve warm with maple syrup or whipped cream.
