Ingredients
For the Unstuffed Peppers:
1 tbsp olive oil
1 lb ground beef (or ground chicken or turkey)
1 medium yellow onion, diced
3 cloves garlic, minced
3 large bell peppers (any color), chopped
1 tsp salt
½ tsp black pepper
1 tsp dried oregano
1 tsp paprika
½ tsp crushed red pepper flakes (optional)
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup beef broth (or vegetable broth)
1 cup cooked white or brown rice
1 tbsp Worcestershire sauce
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
For Garnish (Optional):
Fresh parsley, chopped

Instructions
Step 1: Sauté the Aromatics
In a large skillet, heat olive oil over medium heat.
Add the diced onion and cook for 2–3 minutes until softened.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Step 2: Cook the Ground Beef
Add ground beef to the skillet and break it up with a spoon.
Cook for 5–7 minutes until browned and cooked through.
Drain any excess fat if necessary.
Step 3: Add Peppers and Seasonings
Stir in the chopped bell peppers and cook for 4–5 minutes until they begin to soften.
Season with salt, pepper, oregano, paprika, and red pepper flakes (if using).
Step 4: Add Tomatoes and Broth
Pour in diced tomatoes (with juice), tomato sauce, Worcestershire sauce, and broth.
Stir everything together and bring to a simmer.
Step 5: Add Rice and Simmer
Stir in the cooked rice and mix until fully incorporated.
Reduce heat to low, cover the skillet, and simmer for 5–8 minutes to let the flavors meld and the peppers soften completely.
Step 6: Add Cheese and Finish
Remove the lid and sprinkle mozzarella and Parmesan cheese over the top.
Cover again for 2–3 minutes to allow the cheese to melt.
Alternatively, place the skillet under a broiler for 2–3 minutes for a bubbly, golden top.
Step 7: Serve and Garnish
Scoop the unstuffed pepper mixture into bowls.
Top with fresh parsley, extra cheese, or hot sauce if desired.
