- 16 large white or cremini mushrooms, stems removed
- 1 tablespoon olive oil
- 8 oz ground turkey sausage
- ½ cup onion, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon dried Italian seasoning
- ½ cup breadcrumbs (panko or regular)
- ⅓ cup Parmesan cheese, grated
- 3 tablespoons cream cheese, softened
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
- Salt and pepper, to taste
- Non-stick cooking spray
Instructions
Step 1: Prepare the Mushrooms
- Preheat your oven to 375°F (190°C).
- Clean the mushroom caps with a damp cloth and gently remove the stems.
- Lightly brush the mushroom caps with olive oil and arrange them, hollow side up, on a baking sheet sprayed with non-stick cooking spray.
Step 2: Cook the Filling
- Heat a skillet over medium heat and cook the turkey sausage, breaking it into small pieces, until browned and fully cooked.
- Add the onion, garlic, and Italian seasoning to the skillet, cooking until the onion is soft and translucent.
- Remove from heat and let the mixture cool slightly.
Step 3: Mix the Filling
- In a mixing bowl, combine the cooked sausage mixture, breadcrumbs, Parmesan cheese, cream cheese, parsley, salt, and pepper. Mix until well blended.
Step 4: Stuff the Mushrooms
- Use a spoon to fill each mushroom cap with the sausage mixture, mounding it slightly.
Step 5: Bake
- Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the filling is golden brown.
Step 6: Garnish and Serve
- Remove the mushrooms from the oven and sprinkle with extra parsley. Serve warm and enjoy!
