Ingredients
For the Turkey Sausage Gravy:
-
1 lb ground turkey sausage
-
2 tbsp butter
-
¼ cup all-purpose flour
-
2 ½ cups milk (whole or 2%)
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
Salt, to taste
-
Pinch of red pepper flakes (optional)
For the Biscuit Topping:
-
2 cups all-purpose flour
-
1 tbsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
½ cup cold unsalted butter, cubed
-
¾ cup cold buttermilk (or milk + 1 tsp lemon juice)
-
1 tbsp melted butter (for brushing)
Instructions
Step 1: Make the Turkey Sausage Gravy
-
In a large skillet over medium heat, cook the turkey sausage until browned and fully cooked. Break it into crumbles as it cooks.
-
Add the butter to the skillet. Once melted, sprinkle in the flour and stir to coat the sausage.
-
Cook the flour for 1–2 minutes, then slowly whisk in the milk.
-
Add garlic powder, onion powder, black pepper, and salt.
-
Simmer until the gravy thickens, about 5–7 minutes, stirring often.
-
Taste and adjust seasoning. Add a pinch of red pepper flakes for subtle heat if desired.
-
Pour the sausage gravy into a greased baking dish and spread evenly.
Step 2: Make the Biscuit Dough
-
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
-
Cut in the cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
-
Stir in the buttermilk until just combined—don’t overmix.
-
Turn the dough onto a floured surface and gently pat it to about ¾-inch thickness.
-
Use a biscuit cutter or a floured glass to cut out biscuits.
Step 3: Assemble the Pie
-
Arrange the biscuit rounds over the sausage gravy in the baking dish.
-
Brush the tops of the biscuits with melted butter for a golden finish.
Step 4: Bake
-
Preheat the oven to 400°F (200°C).
-
Bake for 20–25 minutes, or until the biscuits are golden brown and cooked through.
-
Let the pie rest for 5–10 minutes before serving.
Notes
Use Cold Ingredients – Keeps the biscuits flaky and tender.
Don’t Overmix – Gentle handling makes soft, fluffy biscuits.
Adjust Gravy Thickness – If it thickens too much, stir in a splash of milk before baking.
Add Herbs – Fresh thyme or parsley in the gravy or biscuit dough adds extra flavor.
Make It Spicy – Add diced jalapeños or hot sauce for a kick.
