For the Turkey Sausage Gravy:

  • 1 lb ground turkey sausage

  • 2 tbsp butter

  • ¼ cup all-purpose flour

  • 2 ½ cups milk (whole or 2%)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • Salt, to taste

  • Pinch of red pepper flakes (optional)

For the Biscuit Topping:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ cup cold unsalted butter, cubed

  • ¾ cup cold buttermilk (or milk + 1 tsp lemon juice)

  • 1 tbsp melted butter (for brushing)


Instructions

Step 1: Make the Turkey Sausage Gravy

  1. In a large skillet over medium heat, cook the turkey sausage until browned and fully cooked. Break it into crumbles as it cooks.

  2. Add the butter to the skillet. Once melted, sprinkle in the flour and stir to coat the sausage.

  3. Cook the flour for 1–2 minutes, then slowly whisk in the milk.

  4. Add garlic powder, onion powder, black pepper, and salt.

  5. Simmer until the gravy thickens, about 5–7 minutes, stirring often.

  6. Taste and adjust seasoning. Add a pinch of red pepper flakes for subtle heat if desired.

  7. Pour the sausage gravy into a greased baking dish and spread evenly.

Step 2: Make the Biscuit Dough

  1. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

  2. Cut in the cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.

  3. Stir in the buttermilk until just combined—don’t overmix.

  4. Turn the dough onto a floured surface and gently pat it to about ¾-inch thickness.

  5. Use a biscuit cutter or a floured glass to cut out biscuits.

Step 3: Assemble the Pie

  1. Arrange the biscuit rounds over the sausage gravy in the baking dish.

  2. Brush the tops of the biscuits with melted butter for a golden finish.

Step 4: Bake

  1. Preheat the oven to 400°F (200°C).

  2. Bake for 20–25 minutes, or until the biscuits are golden brown and cooked through.

  3. Let the pie rest for 5–10 minutes before serving.
