- 2 lbs beef stew meat, cut into bite-sized chunks
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 1/2 cups water
- 2 cups carrots, cut into chunks
- 2 cups potatoes, peeled and cut into large pieces
- 1 cup parsnips, peeled and chopped (optional)
- 1 cup celery, chopped
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Brown the Beef
- Toss the beef chunks in flour, shaking off any excess.
- Heat olive oil in a large Dutch oven over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove the beef and set aside.
Step 2: Sauté the Aromatics
- In the same pot, add the onion and garlic. Cook for 2-3 minutes until softened and fragrant.
Step 3: Build the Broth
- Stir in the tomato paste and cook for 1 minute.
- Add the beef broth, water, thyme, rosemary, and bay leaves. Stir to combine and scrape up any browned bits from the bottom of the pot.
Step 4: Add the Vegetables and Beef
- Return the browned beef to the pot. Add the carrots, potatoes, parsnips, and celery.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors are well-developed.
Step 5: Season and Serve
- Remove the bay leaves and discard. Taste the stew and adjust the seasoning with salt and pepper.
- Serve hot, garnished with fresh parsley, and enjoy!
