  • 2 lbs beef stew meat, cut into bite-sized chunks
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 1/2 cups water
  • 2 cups carrots, cut into chunks
  • 2 cups potatoes, peeled and cut into large pieces
  • 1 cup parsnips, peeled and chopped (optional)
  • 1 cup celery, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Brown the Beef

  1. Toss the beef chunks in flour, shaking off any excess.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove the beef and set aside.

Step 2: Sauté the Aromatics

  1. In the same pot, add the onion and garlic. Cook for 2-3 minutes until softened and fragrant.

Step 3: Build the Broth

  1. Stir in the tomato paste and cook for 1 minute.
  2. Add the beef broth, water, thyme, rosemary, and bay leaves. Stir to combine and scrape up any browned bits from the bottom of the pot.

Step 4: Add the Vegetables and Beef

  1. Return the browned beef to the pot. Add the carrots, potatoes, parsnips, and celery.
  2. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors are well-developed.

Step 5: Season and Serve

  1. Remove the bay leaves and discard. Taste the stew and adjust the seasoning with salt and pepper.
  2. Serve hot, garnished with fresh parsley, and enjoy!
