- 1 can (14 oz) coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (optional)
- 1 teaspoon brown sugar
- 2 cups mixed vegetables (e.g., carrots, bell peppers, spinach, or snap peas)
- 10–12 frozen or fresh dumplings (chicken, shrimp, or veggie)
For Garnish:
- Fresh cilantro or Thai basil
- Lime wedges
- Sliced red chilies or chili flakes
Instructions
Step 1: Sauté Aromatics
- Heat the vegetable oil in a large pot over medium heat.
- Add the diced onion and cook until softened, about 3-4 minutes.
- Stir in the garlic, ginger, and lemongrass (if using). Cook for 1 minute until fragrant.
Step 2: Build the Broth
- Add the red curry paste to the pot and cook for 1-2 minutes, stirring frequently to release its aroma.
- Pour in the chicken or vegetable broth and coconut milk. Stir to combine.
- Add soy sauce, fish sauce (if using), and brown sugar. Simmer for 5 minutes to allow the flavors to meld.
Step 3: Cook the Dumplings and Vegetables
- Add the dumplings to the simmering broth and cook according to the package instructions, typically 5-7 minutes.
- During the last 3-4 minutes of cooking, add the mixed vegetables. Cook until tender but still vibrant.
Step 4: Garnish and Serve
- Remove the lemongrass stalk, if used.
- Ladle the soup into bowls and garnish with fresh cilantro or Thai basil, lime wedges, and sliced chilies.
- Serve immediately and enjoy!
