Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk (whole milk or 2% works best)
- ½ cup sour cream or plain yogurt (for extra fluffiness)
- Optional mix-ins: chocolate chips, blueberries, or chopped nuts
Instructions
Step 1: Prepare the Oven & Muffin Tin
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or lightly grease it with cooking spray.
Step 2: Mix Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
Step 3: Mix Wet Ingredients
- In a separate bowl, whisk together the melted butter and sugar until well combined.
- Beat in the eggs and vanilla extract until smooth.
- Add the milk and sour cream (or yogurt), and whisk until fully incorporated.
Step 4: Combine Wet & Dry Ingredients
- Gradually add the wet ingredients to the dry ingredients. Stir until just combined, being careful not to overmix. A few lumps are fine—overmixing will lead to dense muffins.
Step 5: Add Mix-ins (Optional)
- If you’re adding chocolate chips, berries, or nuts, gently fold them into the batter with a spatula.
Step 6: Fill the Muffin Tin
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
Step 7: Bake
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs. The tops should be lightly golden.
Step 8: Cool & Serve
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Don’t Overmix – Stir the batter just until combined to keep the muffins light and fluffy.
Use Room Temperature Ingredients – Ensure your butter, eggs, and milk are at room temperature for the best texture.
Fill Muffin Cups Properly – Don’t overfill the muffin cups. ¾ full is perfect for a good rise.
