Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk (whole milk or 2% works best)
  • ½ cup sour cream or plain yogurt (for extra fluffiness)
  • Optional mix-ins: chocolate chips, blueberries, or chopped nuts

Instructions

Step 1: Prepare the Oven & Muffin Tin

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or lightly grease it with cooking spray.

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3: Mix Wet Ingredients

  1. In a separate bowl, whisk together the melted butter and sugar until well combined.
  2. Beat in the eggs and vanilla extract until smooth.
  3. Add the milk and sour cream (or yogurt), and whisk until fully incorporated.

Step 4: Combine Wet & Dry Ingredients

  1. Gradually add the wet ingredients to the dry ingredients. Stir until just combined, being careful not to overmix. A few lumps are fine—overmixing will lead to dense muffins.

Step 5: Add Mix-ins (Optional)

  1. If you’re adding chocolate chips, berries, or nuts, gently fold them into the batter with a spatula.

Step 6: Fill the Muffin Tin

  1. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

Step 7: Bake

  1. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs. The tops should be lightly golden.

Step 8: Cool & Serve

  1. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Don’t Overmix – Stir the batter just until combined to keep the muffins light and fluffy.
Use Room Temperature Ingredients – Ensure your butter, eggs, and milk are at room temperature for the best texture.
Fill Muffin Cups Properly – Don’t overfill the muffin cups. ¾ full is perfect for a good rise.
