Instructions
Step 1: Prepare the Crust
- Preheat your oven to 350°F (175°C).
- Line the bottom of a 9-inch springform pan with parchment paper.
- In a mixing bowl, combine the sugar cookie crumbs and melted butter. Mix until evenly moistened.
- Press the mixture firmly into the bottom of the prepared pan. Use the back of a spoon or a flat-bottomed cup for an even layer.
- Bake the crust for 8-10 minutes, then remove and let it cool.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add the sugar and continue beating until well combined.
- Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the vanilla extract, sour cream, and flour until smooth.
Step 3: Assemble and Bake
- Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool gradually for 1 hour to prevent cracking.
Step 4: Chill and Decorate
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, to fully set.
- Once chilled, decorate with whipped cream, sprinkles, or fruit as desired.
