Ingredients

For the Hash:

  • 1 lb steak (sirloin or ribeye), cut into bite-sized cubes

  • 2 medium russet potatoes, diced into small cubes

  • 1 small onion, diced

  • 1 bell pepper, diced (any color)

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ tsp crushed red pepper flakes (optional)

For the Eggs:

  • 4 eggs

  • 1 tbsp butter or oil (for cooking)

  • Salt and pepper to taste

For Garnish (Optional):

  • 2 tbsp chopped fresh parsley or green onions

  • Hot sauce or salsa

  • Shredded cheese


Instructions

Step 1: Prep the Steak
Pat steak dry and season with a little salt and pepper.
Set aside to bring to room temperature while prepping other ingredients.

Step 2: Cook the Potatoes
Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat.
Add diced potatoes, garlic powder, smoked paprika, salt, and black pepper.
Cook, stirring occasionally, for about 10–12 minutes until golden and crispy on the outside and tender inside.
Remove and set aside.

Step 3: Sauté the Veggies
In the same skillet, add 1 tbsp olive oil.
Add diced onion and bell pepper. Cook for 4–5 minutes until soft and lightly browned.
Return the cooked potatoes to the pan and mix everything together.
Push mixture to one side of the skillet.

Step 4: Cook the Steak
Add steak cubes to the empty side of the skillet.
Sear for 2–3 minutes on each side, or until browned and cooked to your preferred doneness.
Mix steak into the potatoes and veggies once fully cooked.
Taste and adjust seasoning if needed.

Step 5: Cook the Eggs
In a separate nonstick skillet or the same skillet (cleared), melt 1 tbsp butter or oil.
Crack in the eggs and cook to your liking—sunny side up, over easy, or scrambled.
Season with salt and pepper.

Step 6: Assemble & Serve
Spoon the steak and potato hash into bowls or serve straight from the skillet.
Top with eggs, sprinkle with chopped herbs, and add hot sauce or shredded cheese if desired.

Notes

Cut Even Pieces – Uniform cuts ensure everything cooks evenly.
Use Cast Iron – It gives the best crisp and flavor to potatoes and steak.
Don’t Overcrowd – Give your ingredients space to sear, not steam.
Rest the Steak – Let it sit for a few minutes after cooking to retain juices.
