For the Graham Cracker Crust:

  • 1½ cups graham cracker crumbs (about 10 full crackers)

  • ¼ cup granulated sugar

  • 6 tbsp unsalted butter, melted

For the Brownie Layer:

  • ½ cup (1 stick) unsalted butter

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ⅓ cup unsweetened cocoa powder

  • ½ cup all-purpose flour

  • ¼ tsp salt

  • ¼ tsp baking powder

For the Topping:

  • 2 cups mini marshmallows

  • ½ cup milk chocolate chips or chopped chocolate bar


Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper or grease it lightly.

Step 2: Make the Graham Cracker Crust
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
Press the mixture evenly into the bottom of the prepared pan. Use the bottom of a glass or measuring cup to pack it down firmly.
Bake for 8 minutes. Remove from oven and set aside while you prepare the brownie layer.

Step 3: Prepare the Brownie Batter
In a saucepan or microwave-safe bowl, melt the butter. Whisk in the sugar, eggs, and vanilla until smooth.
Add cocoa powder, flour, salt, and baking powder. Stir until fully combined and no streaks of flour remain.
Pour the brownie batter over the baked crust and spread evenly with a spatula.

Step 4: Bake the Brownies
Bake for 20–25 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter). Remove from oven but leave it on.

Step 5: Add the S’mores Topping
Immediately sprinkle mini marshmallows and chocolate chips over the top of the hot brownies.
Return the pan to the oven and broil on high for 1–2 minutes until marshmallows are golden and toasted. Watch very carefully—they can burn quickly!

Step 6: Cool and Slice
Let brownies cool completely in the pan. For clean cuts, chill in the fridge for 30 minutes before slicing. Use a sharp knife and clean between cuts.

Notes

Pack the Crust – Press firmly to prevent it from crumbling when sliced.
