Ingredients
- 1 ½ lbs baby potatoes (Yukon gold or red potatoes)
- 3 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary, chopped (or ½ tsp dried)
- ¼ cup grated Parmesan cheese (optional)
- Fresh parsley for garnish
Instructions
Step 1: Boil the Potatoes
- Place potatoes in a large pot and cover with salted water.
- Bring to a boil and cook for 15-20 minutes until fork-tender.
- Drain and let them cool slightly.
Step 2: Smash the Potatoes
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place potatoes on the baking sheet and gently smash each one with the back of a fork or a potato masher.
Step 3: Add Seasonings
- In a small bowl, mix olive oil, melted butter, garlic, salt, pepper, thyme, and rosemary.
- Brush the mixture generously over each smashed potato.
Step 4: Bake Until Crispy
- Bake for 20-25 minutes until golden brown and crispy.
- If using Parmesan cheese, sprinkle it on top during the last 5 minutes of baking.
Step 5: Garnish & Serve
- Sprinkle with fresh parsley and serve hot!
