Ingredients

1 lb ground beef (or ground chicken)

1 small onion, diced

3 cloves garlic, minced

3–4 medium potatoes, peeled and sliced thin

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (or regular diced tomatoes)

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

½ cup milk

1 tsp smoked paprika

1 tsp dried oregano
-
½ tsp chili powder (optional)

Salt and black pepper to taste

1½ cups shredded cheddar cheese (divided)

Fresh parsley or green onions for garnish (optional)
Instructions
Step 1: Brown the Beef
In a skillet over medium heat, cook ground beef until browned and no longer pink.
Add diced onion and garlic, and cook for another 2–3 minutes until fragrant.
Drain any excess grease.
Step 2: Layer the Ingredients in the Slow Cooker
Grease the inside of your slow cooker lightly with oil or spray.
Layer half the sliced potatoes on the bottom.
Add half the ground beef mixture, half the beans, corn, and tomatoes.
Sprinkle with half the cheese.
Repeat layers with remaining ingredients.
Step 3: Mix the Sauce
In a small bowl, whisk together the cream of mushroom soup, milk, smoked paprika, oregano, chili powder (if using), salt, and pepper.
Pour evenly over the layered ingredients in the slow cooker.
Step 4: Slow Cook to Perfection
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
Sprinkle the remaining cheddar cheese over the top during the last 15 minutes of cooking and let it melt.
Step 5: Serve & Enjoy
Scoop into bowls and garnish with chopped parsley or green onions if desired.
