There’s nothing better than a Shrimp and Spinach Sourdough Melt—buttery, garlicky shrimp paired with sautéed spinach and gooey melted cheese, all sandwiched between crispy, golden sourdough bread. This elevated grilled cheese is perfect for lunch, dinner, or a satisfying snack!

For the Shrimp & Spinach Filling:

  • ½ lb shrimp, peeled, deveined, and chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 cup fresh spinach, chopped
  • 1 teaspoon lemon juice

For the Sandwich:

  • 4 slices sourdough bread
  • 1 tablespoon butter (for toasting)
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • 2 tablespoons cream cheese (optional, for extra creaminess)

Instructions

Step 1: Cook the Shrimp & Spinach

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Add garlic, shrimp, salt, black pepper, and red pepper flakes. Cook for 2-3 minutes until shrimp turn pink and opaque.
  3. Stir in spinach and cook for 1 more minute until wilted.
  4. Remove from heat and squeeze lemon juice over the mixture. Set aside.

Step 2: Assemble the Sandwich

  1. Spread cream cheese (if using) on one side of each slice of sourdough.
  2. Layer mozzarella and cheddar cheese on one slice of bread.
  3. Spoon the shrimp and spinach mixture evenly over the cheese.
  4. Top with more cheese and place another slice of bread on top.

Step 3: Toast Until Golden

  1. Heat a skillet over medium-low heat and melt butter.
  2. Place the sandwich in the skillet and cook for 3-4 minutes on one side until golden.
  3. Flip and cook for another 3-4 minutes until crispy and cheese is melted.

Step 4: Serve & Enjoy!

  1. Slice in half and serve hot with a side of soup, salad, or dipping sauce!

Notes

Use Low Heat for the Perfect Melt – Prevents burning while the cheese melts.
Don’t Overcook the Shrimp – Keep them tender and juicy.
Mix Cheese Varieties – A blend of mozzarella and cheddar creates the best texture.
