Instructions
Step 1: Cook and Shred the Chicken
- Bring a pot of water to a boil and add the chicken breasts. Cook for 15–20 minutes until fully cooked.
- Remove chicken and shred it using two forks. Set aside.
Step 2: Make the Mashed Potatoes
- In a separate pot, boil the diced potatoes in salted water until fork-tender, about 15 minutes.
- Drain and mash with butter, warm milk, salt, and black pepper. For extra creaminess, use a hand mixer. Cover to keep warm.
Step 3: Prepare the Gravy
- In a large skillet, melt butter over medium heat. Stir in the flour and cook for 1–2 minutes until golden.
- Gradually whisk in the chicken broth and milk, stirring constantly to avoid lumps.
- Add garlic powder, onion powder, thyme, paprika, salt, and black pepper. Simmer for 5 minutes until thickened.
- Stir in the shredded chicken and let it simmer for another 5 minutes, allowing the flavors to meld.
Step 4: Serve and Enjoy!
- Spoon the mashed potatoes onto a plate and ladle the shredded chicken gravy over the top.
- Garnish with fresh parsley or extra black pepper. Serve warm and enjoy!
Notes
- Use Warm Milk: Cold milk can make mashed potatoes gluey. Warm it before adding.
- Shred Chicken Easily: Use a hand mixer for quick and effortless shredding.
- Make It Thicker: If the gravy is too thin, simmer longer or add an extra teaspoon of flour.
