Ingredients
- 1 ¾ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 stick unsalted butter, softened
- ¾ cup brown sugar (packed)
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
- 1 cup shelled pistachios, roughly chopped
- Sea salt, for sprinkling on top
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the butter, brown sugar, and granulated sugar together with an electric mixer until light and fluffy, about 3 minutes.
- Add the egg and vanilla extract, and beat until well combined.
Step 2: Combine Wet & Dry Ingredients
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the dark chocolate chips and chopped pistachios using a spatula or spoon.
Step 3: Shape the Cookies
- Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Lightly press down on the cookies to flatten them slightly.
Step 4: Bake the Cookies
- Bake for 10-12 minutes, or until the edges are golden and the centers are set.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Step 5: Add the Finishing Touch
- Once the cookies have cooled slightly, sprinkle a small pinch of sea salt on top of each cookie for the perfect salty-sweet balance.
Notes
Use Good-Quality Chocolate – Choose dark chocolate chips with at least 60% cocoa for a richer flavor.
Don’t Overbake – For soft, chewy cookies, make sure to take them out of the oven as soon as they turn golden at the edges.
Chill the Dough – For thicker cookies, chill the dough for 30 minutes before baking.
Customize the Nuts – Swap pistachios with walnuts, almonds, or pecans for a different nutty flavor.
