Ingredients
For the Chicken:

4 boneless, skinless chicken breasts

1 tbsp olive oil

½ tsp salt

½ tsp black pepper

½ tsp garlic powder
-
½ tsp smoked paprika

Toothpicks or kitchen twine (for securing)
For the Filling:

1 cup fresh spinach, chopped

1 tsp olive oil

1 clove garlic, minced

½ cup roasted red peppers, sliced (jarred or homemade)

1 cup shredded mozzarella cheese

2 tbsp cream cheese (optional, for extra creaminess)

Salt and pepper to taste
For Topping (Optional):

2 tbsp grated Parmesan cheese

Instructions
Step 1: Preheat & Prepare the Chicken

Preheat your oven to 375°F (190°C).

Place chicken breasts on a cutting board.

Slice a deep pocket into the side of each chicken breast (don’t cut all the way through).

Season the outside of each breast with salt, pepper, garlic powder, and paprika.
Step 2: Make the Filling

In a skillet, heat 1 tsp olive oil over medium heat.

Add garlic and sauté for 30 seconds until fragrant.

Add chopped spinach and cook for 1–2 minutes until wilted.

Transfer to a bowl and mix with roasted red peppers, mozzarella, and cream cheese if using.

Step 3: Stuff the Chicken

Spoon the filling evenly into each chicken breast pocket.

Step 4: Sear the Chicken (Optional for Extra Flavor)

Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
