Ingredients
For the Cookie Dough:

½ cup unsalted butter, softened

½ cup creamy peanut butter

½ cup brown sugar (packed)

¼ cup granulated sugar

1 large egg
-
1 tsp vanilla extract

1¼ cups all-purpose flour

½ tsp baking soda

¼ tsp salt

¾ cup semi-sweet chocolate chips
For the Center:

24 mini Reese’s peanut butter cups (unwrapped and chilled)
Instructions
Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C).

Lightly grease a 24-cup mini muffin pan or line with paper mini liners.

Unwrap the mini Reese’s cups and chill them in the freezer while you make the dough—this helps them keep their shape when pressed into the warm cookies.
Step 2: Make the Cookie Dough
4. In a large mixing bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
5. Add the egg and vanilla extract and beat until well combined.
6. In a separate bowl, whisk together the flour, baking soda, and salt.
7. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
8. Fold in the chocolate chips with a spatula.
Step 3: Fill the Muffin Pan
9. Using a small cookie scoop or spoon, scoop about 1 tablespoon of dough into each muffin cup.
10. Gently press the dough down into the cup to form a shallow well in the center.
Step 4: Bake
11. Bake for 10–12 minutes or until the edges are golden and the centers look set (not wet).
12. Remove from the oven and immediately press a chilled mini Reese’s cup into the center of each cookie bite.
13. Let them cool in the pan for about 10–15 minutes before carefully removing them to a cooling rack.
Notes
Chill the Reese’s – This helps them hold their shape when added to hot cookies.
Don’t Overbake – Take them out as soon as they look set for soft, chewy bites.
Use a Nonstick Pan – Or line with mini liners to make removal easier.
Let Them Cool – Cookie bites will firm up as they cool and be easier to remove.
