  • 1 lb baby potatoes, halved (or quartered if large)

  • 1 lb fresh green beans, trimmed

  • 3 tbsp olive oil

  • 1 packet (1 oz) ranch seasoning mix (or 2 tbsp homemade blend)

  • ½ tsp garlic powder

  • ¼ tsp black pepper

  • Salt to taste (if using unsalted ranch mix)

  • 1 tbsp chopped fresh parsley (for garnish)

  • Optional: ¼ cup grated Parmesan cheese


Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C).
Line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2: Prep the Vegetables
Wash and cut the baby potatoes into halves or quarters depending on size.
Trim the ends off the green beans if using fresh.
Pat dry to ensure a crisp roast.

Step 3: Season Everything
In a large bowl, toss the potatoes and green beans with olive oil, ranch seasoning, garlic powder, and black pepper.
Make sure everything is evenly coated with the seasoning.

Step 4: Arrange on Baking Sheet
Spread the vegetables in a single layer on the prepared baking sheet.
Place potatoes cut side down for better crisping.
If your baking sheet is crowded, use two trays to avoid steaming.

Step 5: Roast Until Golden
Roast for 25–30 minutes, tossing halfway through, until potatoes are golden and fork-tender and green beans are slightly crispy and blistered.

Step 6: Finish & Serve
Sprinkle with chopped fresh parsley and grated Parmesan if desired.
Serve immediately while hot and crispy.
