  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare Your Oven and Muffin Tin

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease with non-stick spray.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.

Step 3: Combine the Wet Ingredients

  1. In a large bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, eggs, oil, milk, and vanilla extract until smooth.

Step 4: Mix the Batter

  1. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix, as this can make the muffins dense.

Step 5: Fill the Muffin Cups

  1. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Step 6: Bake

  1. Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

  • Use Pure Pumpkin Puree: Ensure you’re using 100% pumpkin puree, not pumpkin pie filling, which has added sugar and spices.
