Ingredients

Scale
  • 4 large eggs
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • Pinch of salt
  • 8 slices of bread (thick-cut or day-old bread works best)
  • Butter or oil, for greasing the pan
  • Maple syrup, powdered sugar, or whipped cream, for serving

Instructions

Step 1: Make the Batter

  1. In a mixing bowl, whisk together the eggs, pumpkin puree, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt until well combined.

Step 2: Prepare the Bread

  1. Preheat a skillet or griddle over medium heat and grease it lightly with butter or oil.

Step 3: Dip the Bread

  1. Dip each slice of bread into the pumpkin batter, ensuring both sides are evenly coated. Allow excess batter to drip off.

Step 4: Cook the French Toast

  1. Place the coated bread onto the heated skillet or griddle. Cook for 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining slices.

Step 5: Serve and Enjoy

  1. Serve the pumpkin French toast warm with your favorite toppings like maple syrup, powdered sugar, or whipped cream.

Notes

  • Use Day-Old Bread: Slightly stale bread soaks up the batter without falling apart.
  • Customize the Spices: Adjust the spice blend to your taste or add a pinch of cloves for extra warmth.
  • Keep Warm: Place cooked slices on a baking sheet in a 200°F (93°C) oven while you finish cooking the rest.
