Instructions

Step 1: Make the Pumpkin Cream Cheese Filling

  1. In a small bowl, mix cream cheese, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract until smooth and creamy.
  2. Spread a generous layer of the filling onto 4 slices of bread, then top with the remaining slices to make sandwiches.

Step 2: Prepare the French Toast Batter

  1. In a mixing bowl, whisk together eggs, milk, pumpkin puree, cinnamon, nutmeg, vanilla extract, and maple syrup until well combined.

Step 3: Cook the French Toast

  1. Heat a large skillet or griddle over medium heat and melt butter.
