For the Pumpkin Bread:
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon pumpkin pie spice
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- ¼ cup milk
- 1 teaspoon vanilla extract
For the Cream Cheese Filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
Step 1: Preheat and Prep
- Preheat your oven to 350°F (175°C).
- Line a 9×5-inch loaf pan with parchment paper or grease it lightly.
Step 2: Make the Cream Cheese Filling
- In a mixing bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy. Set aside.
Step 3: Prepare the Pumpkin Batter
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice.
- In a separate large bowl, mix the pumpkin puree, sugar, vegetable oil, eggs, milk, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
Step 4: Layer the Bread
- Pour half of the pumpkin batter into the prepared loaf pan, spreading it evenly.
- Spoon the cream cheese mixture over the batter, spreading it gently to create an even layer.
- Pour the remaining pumpkin batter over the cream cheese layer and smooth the top.
Step 5: Bake
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- If the top starts to brown too quickly, tent it with foil after 30 minutes.
Step 6: Cool and Serve
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
