For the Pumpkin Bread:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon nutmeg

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×5-inch loaf pan with parchment paper or grease it lightly.

Step 2: Make the Cream Cheese Filling

  1. In a mixing bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy. Set aside.

Step 3: Prepare the Pumpkin Batter

  1. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice.
  2. In a separate large bowl, mix the pumpkin puree, sugar, vegetable oil, eggs, milk, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.

Step 4: Layer the Bread

  1. Pour half of the pumpkin batter into the prepared loaf pan, spreading it evenly.
  2. Spoon the cream cheese mixture over the batter, spreading it gently to create an even layer.
  3. Pour the remaining pumpkin batter over the cream cheese layer and smooth the top.

Step 5: Bake

  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. If the top starts to brown too quickly, tent it with foil after 30 minutes.

Step 6: Cool and Serve

  1. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Slice and enjoy!
