Ingredients

  • All-Purpose Flour (1 ½ cups) – For a perfect pancake texture.
  • Baking Powder (1 tsp) – Helps the pancakes rise.
  • Salt (¼ tsp) – Enhances the flavors.
  • Sugar (2 tbsp) – Adds just the right sweetness.
  • Eggs (2 large) – Binds the batter together.
  • Milk (¾ cup) – Makes the batter smooth.
  • Vanilla Extract (1 tsp) – Adds warmth and aroma.
  • Apples (2 medium, peeled and thinly sliced) – The star of the dish! Tart apples like Granny Smith work best.
  • Cinnamon (½ tsp, optional) – For extra warm spice.
  • Vegetable Oil (for frying) – Creates crispy edges.
  • Powdered Sugar (for dusting, optional) – A classic finishing touch.

Instructions

Step 1: Prepare the Batter
In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon (if using). In another bowl, beat the eggs, then add the milk and vanilla extract. Slowly combine the wet and dry ingredients, stirring until smooth.

Step 2: Fold in the Apples
Gently fold the thinly sliced apples into the batter, ensuring they’re evenly coated.

Step 3: Heat the Oil
Heat about 2 tablespoons of vegetable oil in a skillet over medium heat.

Step 4: Cook the Pancakes
Scoop about ¼ cup of batter for each pancake into the hot skillet. Flatten slightly with the back of a spoon. Cook for 2–3 minutes per side, until golden brown and cooked through.

Step 5: Drain and Serve
Transfer cooked pancakes to a plate lined with paper towels to remove excess oil. Sprinkle with powdered sugar or serve with honey, jam, or yogurt.

Notes

  • Use Tart Apples: They balance the sweetness perfectly.
  • Don’t Overmix: Stir until just combined for fluffy pancakes.
  • Cook Over Medium Heat: Too high, and they’ll burn outside before cooking inside.
  • Drain on Paper Towels: Keeps them crispy without being greasy.
