  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons butter, melted

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons honey or powdered sugar
  • 1 teaspoon vanilla extract

For Topping:

  • 1 cup fresh strawberries, diced
  • Maple syrup (optional, for drizzling)
  • Powdered sugar (optional, for dusting)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a muffin tin to prevent sticking.

Step 2: Make the Pancake Batter

In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.

Step 3: Fill the Muffin Tin

Spoon the pancake batter into the greased muffin cups, filling each about 2/3 full.

Step 4: Bake the Pancake Cups

Bake for 12-15 minutes or until the tops are golden and a toothpick inserted comes out clean. Let them cool for a few minutes before removing them from the tin.

Step 5: Make the Cream Cheese Filling

While the pancake cups are baking, mix the softened cream cheese, honey (or powdered sugar), and vanilla extract in a bowl until smooth and creamy.

Step 6: Fill and Serve

Once the pancake cups have slightly cooled, use a spoon or piping bag to fill each cup with the cream cheese mixture. Top with diced strawberries and a drizzle of maple syrup or a dusting of powdered sugar if desired.
