Ingredients
For the Feta Rolls:
- 6 sheets phyllo dough – Light, flaky, and crisps up beautifully.
- 8 oz feta cheese, crumbled – The star of the show, salty and creamy.
- 2 tablespoons cream cheese – Adds extra smoothness to the filling.
- 1 teaspoon dried oregano – For a little Mediterranean touch.
- ½ teaspoon black pepper – Enhances the flavor.
- 2 tablespoons olive oil – Helps crisp up the phyllo dough.
- 1 egg, beaten – To seal the edges and give a golden finish.
For the Chili Honey:
- ¼ cup honey – Sweet and sticky goodness.
- ½ teaspoon red pepper flakes – Adds a little heat (adjust to taste).
- ½ teaspoon lemon juice – Balances the sweetness.
Instructions
Step 1: Prepare the Feta Filling
- In a bowl, mix crumbled feta, cream cheese, oregano, and black pepper until well combined.
Step 2: Assemble the Feta Rolls
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay one sheet of phyllo dough on a clean surface and lightly brush it with olive oil.
- Place another sheet on top and repeat until you have three layers.
- Cut the layered phyllo sheets into three equal strips.
- Place a spoonful of feta filling at one end of each strip.
- Roll tightly, folding in the sides as you go (like a spring roll). Brush the edge with beaten egg to seal.
- Repeat with the remaining phyllo and feta mixture.
Step 3: Bake Until Crispy
- Arrange the rolls on the prepared baking sheet, seam side down.
- Brush the tops with more olive oil for a golden, crispy finish.
- Bake for 15-18 minutes, or until golden brown and crispy.
Step 4: Make the Chili Honey
- In a small saucepan over low heat, warm the honey, red pepper flakes, and lemon juice for 1-2 minutes.
- Remove from heat and let it infuse for a few minutes.
Step 5: Drizzle and Serve
- Drizzle the warm chili honey over the feta rolls.
- Serve immediately while crispy and hot.
Notes
Don’t overfill – Too much filling can cause the rolls to burst.
