Ingredients
For the Crust:
- 1 cup vanilla wafer crumbs (or graham crackers)
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- ¼ cup sour cream
- ½ teaspoon vanilla extract
- ½ teaspoon orange extract
- 1 tablespoon orange zest
- 2 tablespoons fresh orange juice
- A few drops of orange food coloring (optional, for vibrant color)
For the Topping:
- 1 cup whipped topping or homemade whipped cream
- Orange zest, for garnish
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C) and line a muffin tin with cupcake liners.
- In a bowl, mix vanilla wafer crumbs, sugar, and melted butter until combined.
- Divide evenly between the liners and press firmly to create a crust.
- Bake for 5 minutes, then set aside to cool.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth.
- Add egg, sour cream, vanilla extract, orange extract, orange zest, and orange juice, mixing until combined.
- If using, stir in a few drops of orange food coloring for a vibrant orange hue.
Step 3: Fill and Bake
- Divide the batter evenly over the cooled crusts.
- Bake for 15-18 minutes, or until the centers are set.
- Let cool in the pan for 10 minutes, then transfer to the fridge to chill for at least 2 hours.
Step 4: Add the Topping
- Once chilled, top each mini cheesecake with whipped topping and a sprinkle of orange zest.
- Serve cold and enjoy!
Notes
Use Fresh Oranges – Fresh zest and juice bring out the best citrus flavor.
Don’t Overbake – The centers should be slightly jiggly when you remove them.
