  • 2 large yellow onions, thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper

  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)

For the Pasta:

  • 8 oz pasta (fettuccine, linguine, or rigatoni)
  • 3 cups beef broth (or vegetable broth for a vegetarian version)
  • ½ cup dry white wine (optional, for depth of flavor)
  • ½ teaspoon Worcestershire sauce
  • ½ cup grated Gruyère cheese (or Swiss cheese)
  • ¼ cup grated Parmesan cheese
  • ½ cup heavy cream (optional, for extra creaminess)

For Topping:

  • Extra Gruyère or Parmesan
  • Fresh thyme or chopped parsley

Instructions

Step 1: Caramelize the Onions

  1. Heat butter and olive oil in a large pot over medium-low heat.
  2. Add sliced onions, salt, black pepper, and sugar (if using). Cook for 20-25 minutes, stirring occasionally, until onions are deeply golden and caramelized.
  3. Stir in garlic and thyme; cook for 1 more minute.

Step 2: Simmer the Pasta

  1. Pour in white wine (if using) and cook for 2 minutes, scraping up any browned bits.
  2. Add beef broth, Worcestershire sauce, and pasta. Stir well and bring to a gentle simmer.
  3. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.

Step 3: Make It Creamy & Cheesy

  1. Stir in Gruyère, Parmesan, and heavy cream (if using).
  2. Continue stirring until the cheese melts and the sauce is creamy.

Step 4: Serve & Enjoy!

  1. Sprinkle with extra cheese and fresh thyme before serving.
  2. Serve warm and enjoy!

Notes

Be Patient with the Onions – Caramelizing them slowly gives the best flavor.
For Extra Flavor – Add a splash of balsamic vinegar or a pinch of red pepper flakes.
Make It Heartier – Stir in sautéed mushrooms or shredded chicken.
