Ingredients
For the Caramelized Onions:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 large yellow onions, thinly sliced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon sugar (optional, to speed up caramelization)
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme (or ½ teaspoon dried)
For the Pasta:
- 8 oz pasta (fettuccine, linguine, or rigatoni)
- 3 cups beef broth (or vegetable broth for a vegetarian version)
- ½ cup dry white wine (optional, for depth of flavor)
- ½ teaspoon Worcestershire sauce
- ½ cup grated Gruyère cheese (or Swiss cheese)
- ¼ cup grated Parmesan cheese
- ½ cup heavy cream (optional, for extra creaminess)
For Topping:
- Extra Gruyère or Parmesan
- Fresh thyme or chopped parsley
Instructions
Step 1: Caramelize the Onions
- Heat butter and olive oil in a large pot over medium-low heat.
- Add sliced onions, salt, black pepper, and sugar (if using). Cook for 20-25 minutes, stirring occasionally, until onions are deeply golden and caramelized.
- Stir in garlic and thyme; cook for 1 more minute.
Step 2: Simmer the Pasta
- Pour in white wine (if using) and cook for 2 minutes, scraping up any browned bits.
- Add beef broth, Worcestershire sauce, and pasta. Stir well and bring to a gentle simmer.
- Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
Step 3: Make It Creamy & Cheesy
- Stir in Gruyère, Parmesan, and heavy cream (if using).
- Continue stirring until the cheese melts and the sauce is creamy.
Step 4: Serve & Enjoy!
- Sprinkle with extra cheese and fresh thyme before serving.
- Serve warm and enjoy!
Notes
Be Patient with the Onions – Caramelizing them slowly gives the best flavor.
For Extra Flavor – Add a splash of balsamic vinegar or a pinch of red pepper flakes.
Make It Heartier – Stir in sautéed mushrooms or shredded chicken.
Use Good Cheese – Gruyère adds the best melty, nutty flavor.
