Instructions
Step 1: Make the Pumpkin Mixture
- In a mixing bowl, combine the pumpkin puree, cream cheese, powdered sugar, vanilla extract, pumpkin pie spice, and salt. Mix until smooth.
- Stir in the graham cracker crumbs until the mixture is well combined and holds its shape when rolled.
Step 2: Roll the Balls
- Scoop about 1 tablespoon of the mixture and roll it into a ball. Place it on a baking sheet lined with parchment paper. Repeat with the remaining mixture.
- Chill the balls in the refrigerator for 20-30 minutes to firm up.
Step 3: Melt the Chocolate
- In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between, until smooth. Add the coconut oil for a thinner, glossier coating if desired.
Step 4: Coat the Balls
