Instructions

Step 1: Make the Pumpkin Mixture

  1. In a mixing bowl, combine the pumpkin puree, cream cheese, powdered sugar, vanilla extract, pumpkin pie spice, and salt. Mix until smooth.
  2. Stir in the graham cracker crumbs until the mixture is well combined and holds its shape when rolled.

Step 2: Roll the Balls

  1. Scoop about 1 tablespoon of the mixture and roll it into a ball. Place it on a baking sheet lined with parchment paper. Repeat with the remaining mixture.
  2. Chill the balls in the refrigerator for 20-30 minutes to firm up.

Step 3: Melt the Chocolate

  1. In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between, until smooth. Add the coconut oil for a thinner, glossier coating if desired.

Step 4: Coat the Balls

  1. Using a fork or skewer, dip each chilled ball into the melted chocolate, ensuring it’s fully coated. Place it back on the parchment paper.
  2. Optional: Sprinkle with crushed graham crackers, chopped nuts, or a dusting of pumpkin pie spice while the chocolate is still wet.
