- 1 ½ lbs ground beef
- 1 cup breadcrumbs (or crushed tortilla chips for extra flavor)
- 2 eggs
- ½ cup salsa (mild, medium, or spicy—your choice)
- 1 packet taco seasoning (about 2 tablespoons)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion (finely chopped)
- 2 tablespoons ketchup
- 1 tablespoon sour cream (optional, for moisture)
- 1 teaspoon cumin (for extra taco flavor, optional)
- Salt and pepper (to taste)
For the Topping:
- ½ cup salsa
- ½ cup shredded cheese

Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper for easy cleanup.
Step 2: Mix the Meatloaf
- In a large bowl, combine the ground beef, breadcrumbs (or crushed tortilla chips), eggs, salsa, taco seasoning, chopped onion, shredded cheese, cumin, sour cream, salt, and pepper.
- Mix everything until just combined—don’t overmix, as it can make the meatloaf tough.
Step 3: Shape and Bake
- Transfer the mixture into the prepared loaf pan, pressing it down gently to form an even loaf.
- Bake in the preheated oven for 40-45 minutes.
Step 4: Add Toppings
- Remove the meatloaf from the oven. Spread the additional salsa over the top and sprinkle with shredded cheese.
- Return to the oven for another 10 minutes, or until the cheese is melted and bubbly.
