  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional, for spice)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups chicken broth
  • 1 ½ cups heavy cream (or half-and-half for a lighter option)
  • ½ cup grated Parmesan cheese
  • ¾ cup sun-dried tomatoes, chopped
  • 2 cups shredded cooked chicken (rotisserie works great!)
  • 1 cup baby spinach (or kale)
  • ½ cup small pasta (orzo, ditalini, or elbow)

For Garnish:

  • Fresh basil, chopped
  • Extra Parmesan cheese
  • Crushed red pepper flakes

Instructions

Step 1: Sauté the Aromatics

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion and cook for 2-3 minutes, until softened.
  3. Stir in garlic, red pepper flakes, oregano, basil, salt, and black pepper, cooking for 30 seconds until fragrant.

Step 2: Build the Broth

  1. Pour in chicken broth and bring to a simmer.
  2. Add sun-dried tomatoes and pasta, cooking for 8-10 minutes until the pasta is tender.

Step 3: Make It Creamy

  1. Lower heat to medium-low and stir in heavy cream and Parmesan cheese, stirring until melted.
  2. Add shredded chicken and spinach, cooking for 2 more minutes until spinach is wilted.

Step 4: Serve & Enjoy!

  1. Ladle into bowls and top with fresh basil, extra Parmesan, and red pepper flakes.
  2. Serve warm with crusty bread or garlic toast.

Notes
