Ingredients

- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional, for spice)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 cups chicken broth
- 1 ½ cups heavy cream (or half-and-half for a lighter option)
- ½ cup grated Parmesan cheese
- ¾ cup sun-dried tomatoes, chopped
- 2 cups shredded cooked chicken (rotisserie works great!)
- 1 cup baby spinach (or kale)
- ½ cup small pasta (orzo, ditalini, or elbow)
For Garnish:
- Fresh basil, chopped
- Extra Parmesan cheese
- Crushed red pepper flakes
Instructions
Step 1: Sauté the Aromatics
- Heat butter and olive oil in a large pot over medium heat.
- Add onion and cook for 2-3 minutes, until softened.
- Stir in garlic, red pepper flakes, oregano, basil, salt, and black pepper, cooking for 30 seconds until fragrant.
Step 2: Build the Broth
- Pour in chicken broth and bring to a simmer.
- Add sun-dried tomatoes and pasta, cooking for 8-10 minutes until the pasta is tender.
Step 3: Make It Creamy
- Lower heat to medium-low and stir in heavy cream and Parmesan cheese, stirring until melted.
- Add shredded chicken and spinach, cooking for 2 more minutes until spinach is wilted.
Step 4: Serve & Enjoy!
- Ladle into bowls and top with fresh basil, extra Parmesan, and red pepper flakes.
- Serve warm with crusty bread or garlic toast.
