Ingredients

For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted

For the Cheesecake Layer:
12 oz cream cheese, softened
½ cup powdered sugar
¼ cup fresh lime juice
1 teaspoon lime zest
1 teaspoon vanilla extract
1 cup whipped cream or whipped topping

For the Lime Mousse Layer:
1 (3 oz) package lime-flavored gelatin
½ cup boiling water
½ cup cold water
1 teaspoon lime zest
1 cup whipped cream or whipped topping

For Garnish (Optional):
Extra whipped cream
Thin lime slices or curls
Graham cracker crumbs
Fresh mint leaves


Instructions

Step 1: Make the Crust
In a bowl, mix graham cracker crumbs and sugar
Stir in melted butter until evenly combined
Press mixture firmly into the bottom of a 9-inch springform pan
Chill in the fridge for 15–20 minutes to set

Step 2: Prepare the Cheesecake Layer
In a large bowl, beat cream cheese until smooth and fluffy
Add powdered sugar, lime juice, lime zest, and vanilla
Mix until creamy and fully combined
Fold in whipped cream until smooth
Spread the cheesecake mixture evenly over the chilled crust
Refrigerate while preparing the mousse layer

Step 3: Make the Lime Mousse
In a medium bowl, dissolve lime gelatin in boiling water
Stir in cold water and lime zest
Let cool for 10–15 minutes at room temperature (do not let it fully set)
Fold in whipped cream gently until combined and fluffy
Pour mousse over the cheesecake layer and smooth the top
Refrigerate at least 4 hours, or until fully set

Step 4: Garnish and Serve
Once set, remove the cheesecake from the springform pan
Top with swirls of whipped cream, lime slices, zest, or mint if desired
Slice with a hot knife for clean cuts
Serve chilled and enjoy the creamy, citrusy goodness
