Ingredients

¾ cup whole milk ricotta cheese
1 tbsp honey (or maple syrup)
Zest of 1 lemon
½ tsp vanilla extract
Pinch of salt
For the Topping:
1 cup fresh blueberries
1 tsp lemon juice
1 tsp honey (optional, for drizzling)
Extra lemon zest, for garnish
Fresh mint leaves, for garnish (optional)
For the Toast Base:
4 slices of thick-cut bread (sourdough, multigrain, or brioche work great)
1–2 tbsp butter or olive oil, for toasting
Instructions
Step 1: Toast the Bread
Lightly butter or drizzle olive oil on both sides of your bread slices.
Toast in a skillet over medium heat for 2–3 minutes per side until golden and crisp, or use a toaster if preferred.
Set aside to cool slightly before adding toppings.
Step 2: Make the Ricotta Mixture
In a small bowl, combine ricotta cheese, honey, lemon zest, vanilla extract, and a tiny pinch of salt.
Stir until smooth and creamy. Taste and adjust sweetness or lemon zest if desired.
Step 3: Prepare the Blueberries
In another small bowl, toss fresh blueberries with lemon juice.
Let sit for 2–3 minutes to absorb the citrus flavor.
Step 4: Assemble the Toast
