- 1 cup buttermilk

Instructions
Step 1: Make the Pancake Batter
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the egg, buttermilk, milk, melted butter, vanilla extract, lime juice, and lime zest.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be lumpy, so don’t overmix.
Step 2: Cook the Pancakes
- Heat a griddle or non-stick pan over medium heat and lightly grease with butter or cooking spray.
- Pour about ¼ cup of batter onto the pan for each pancake. Cook for 2-3 minutes, or until small bubbles form on the surface.
- Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
- Remove the pancakes from the pan and stack them on a plate.
Step 3: Make the Topping
- In a mixing bowl, whisk the heavy cream with the powdered sugar and lime juice until stiff peaks form (you can use an electric mixer for quicker results).

Step 4: Assemble & Serve
