For the Pancakes:

  • 1 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk

  • 2 tablespoons melted butter

  • 2 tablespoons powdered sugar
  • 1 teaspoon lime juice
  • Lime zest (for garnish)

Optional:

  • Crushed graham crackers (to mimic the crust of a key lime pie)

Instructions

Step 1: Make the Pancake Batter

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the egg, buttermilk, milk, melted butter, vanilla extract, lime juice, and lime zest.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be lumpy, so don’t overmix.

Step 2: Cook the Pancakes

  1. Heat a griddle or non-stick pan over medium heat and lightly grease with butter or cooking spray.
  2. Pour about ¼ cup of batter onto the pan for each pancake. Cook for 2-3 minutes, or until small bubbles form on the surface.
  3. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  4. Remove the pancakes from the pan and stack them on a plate.

Step 3: Make the Topping

  1. In a mixing bowl, whisk the heavy cream with the powdered sugar and lime juice until stiff peaks form (you can use an electric mixer for quicker results).
  2. Once the cream is whipped, gently fold in some lime zest for extra flavor.

Step 4: Assemble & Serve

  1. Stack your pancakes on a plate and top each with a generous dollop of the lime whipped cream.
  2. Optional: Sprinkle crushed graham crackers on top to mimic the key lime pie crust.
  3. Garnish with extra lime zest and a slice of lime for a festive touch.
