  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, chopped
  • ½ cup red onion, thinly sliced
  • ½ cup black olives, sliced
  • ½ cup mozzarella cheese, cubed (optional)
  • 1 cup Italian dressing (store-bought or homemade)
  • Salt and pepper, to taste
  • Fresh herbs (optional, such as basil or parsley)

Instructions

Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente (about 8-10 minutes). Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2: Prepare the Vegetables
While the pasta is cooking, chop the vegetables—halve the cherry tomatoes, dice the cucumber, chop the bell pepper, slice the onion, and cut the olives into rings.

Step 3: Mix the Salad
In a large mixing bowl, combine the cooked pasta, tomatoes, cucumber, bell pepper, red onion, olives, and mozzarella cheese (if using).

Step 4: Add the Dressing
Pour the Italian dressing over the pasta mixture and toss everything together until evenly coated. Season with salt and pepper to taste.

 

Step 5: Chill and Serve
Cover the bowl and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Before serving, give it one last toss. Garnish with fresh herbs, if desired.
