Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder (unsweetened)
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/4 cup mini marshmallows (optional, for topping)
- Chocolate syrup (for drizzling)
- Whipped cream (optional, for topping)
Instructions
Step 1: Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
Step 2: Combine the Wet Ingredients
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Step 3: Make the Pancake Batter
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix—it’s okay if the batter is a little lumpy.
Step 4: Cook the Pancakes
Heat a griddle or frying pan over medium heat and lightly grease with butter or cooking spray. Pour 1/4 cup of pancake batter onto the pan for each pancake. Cook for about 2-3 minutes, until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown.
Step 5: Serve and Enjoy
Stack the pancakes on a plate and top with mini marshmallows, a drizzle of chocolate syrup, and a dollop of whipped cream if desired.
Notes
- Add chocolate chips: For extra chocolatey goodness, sprinkle mini chocolate chips into the pancake batter before cooking.
- Make it dairy-free: Swap the milk for almond milk or any dairy-free milk of your choice, and use dairy-free butter.
- Make it healthier: You can reduce the sugar and opt for whole wheat flour for a more wholesome version.
