Ingredients

  • 2 lbs carrots (peeled and cut into sticks or left whole if small)

  • 2 tbsp olive oil

  • 3 tbsp honey

  • 1 ½ tsp fresh thyme leaves (or ½ tsp dried thyme)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Optional: 1 tbsp balsamic vinegar (for added depth and acidity)

  • Optional garnish: extra thyme sprigs or chopped parsley


Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2: Prepare the Carrots
Peel the carrots and cut them into uniform sticks (about 3–4 inches long).
If using baby carrots or thin young carrots, you can leave them whole.
Place carrots in a large mixing bowl.

Step 3: Season the Carrots
Add olive oil, honey, thyme leaves, salt, and pepper to the bowl.
If using balsamic vinegar, add it now.
Toss everything until the carrots are evenly coated with the glaze.

Step 4: Roast the Carrots
Spread the carrots in a single layer on the prepared baking sheet.
Roast for 25–30 minutes, turning once halfway through, until the carrots are tender and golden at the edges.

Step 5: Serve and Garnish
Transfer to a serving platter and garnish with extra thyme or chopped parsley for a pop of color.

Notes
