Ingredients

1 cup (240 g) cottage cheese (full-fat or low-fat)
¼ cup (60 ml) warm water (about 110°F / 43°C)
1 packet (2 ¼ tsp) active dry yeast
2 tbsp honey or maple syrup
2 large eggs
2 tbsp olive oil or melted butter
2 ½3 cups (300360 g) all-purpose or bread flour
½ cup (45 g) oat flour or whole wheat flour
1 tsp salt
Optional: 2 tbsp ground flaxseed or chia seeds for added fiber


Instructions

Step 1: Activate the Yeast
In a small bowl, stir the warm water and honey together. Sprinkle the yeast over the top and let sit for 5–10 minutes until foamy.

Step 2: Combine the Wet Ingredients
In a large bowl, whisk the eggs, cottage cheese, and oil together until mostly smooth. It’s okay if the cottage cheese remains slightly lumpy—it will melt into the dough as it bakes.

Step 3: Mix the Dough
Add the yeast mixture to the cottage cheese mixture and stir. Gradually add in 2 ½ cups of flour, oat flour, salt, and optional seeds. Stir with a wooden spoon or dough hook until a sticky dough forms. Add more flour as needed until the dough comes together and pulls away from the bowl.

Step 4: Knead the Dough
Turn the dough onto a floured surface and knead for 5–7 minutes until smooth and elastic. If using a stand mixer, knead with the dough hook for about 5 minutes on medium speed.

Step 5: First Rise
Place the dough in a greased bowl, cover with a towel, and let it rise in a warm spot for 60–75 minutes, or until doubled in size.

Step 6: Shape and Second Rise
Punch down the dough and shape it into a log. Place in a greased loaf pan. Cover and let it rise again for 30–45 minutes, until puffed and slightly domed over the top of the pan.

Step 7: Bake the Bread
Preheat your oven to 350°F (175°C). Bake the bread for 35–40 minutes, until golden brown and hollow-sounding when tapped. The internal temperature should be around 190°F (88°C).

 

Step 8: Cool and Serve
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Don’t Overheat the Water – Too hot will kill the yeast
Use Room Temp Eggs – Helps maintain a consistent dough temperature
Add Nuts or Seeds – For crunch and even more protein
Use a Thermometer – Ensures perfect doneness
