  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (if needed)
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Dijon mustard
  • 1 cup mushrooms, sliced
  • 12 oz egg noodles or pasta of choice
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

Step 1: Cook the Ground Beef

  1. Heat a large skillet over medium heat. If necessary, add olive oil to prevent sticking.
  2. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain excess grease if needed.

Step 2: Sauté Aromatics and Mushrooms
3. Add the onions and garlic to the skillet. Cook for 2-3 minutes until softened.
4. Stir in the mushrooms and cook for another 4-5 minutes until they’re tender and golden.

Step 3: Build the Sauce
5. Sprinkle the flour over the beef mixture and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
6. Gradually pour in the beef broth, whisking constantly to avoid lumps.
7. Add the paprika, Dijon mustard, salt, and pepper. Bring the mixture to a simmer.

Step 4: Add the Noodles and Cream
8. Stir in the uncooked noodles and ensure they’re submerged in the sauce. Cover the skillet and simmer for about 8-10 minutes, stirring occasionally, until the noodles are cooked.
9. Once the noodles are tender, lower the heat and stir in the sour cream until the sauce is smooth and creamy.

Step 5: Garnish and Serve
10. Sprinkle with fresh parsley, if desired, and serve warm.

Notes

  • Use Fresh Mushrooms: Button or cremini mushrooms work great for their earthy flavor.
  • Don’t Boil the Sour Cream: Add it at the end on low heat to prevent curdling.
  • Swap the Noodles: Try rice, mashed potatoes, or even cauliflower rice for a different twist.
