4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon granulated sugar (optional for mild sweetness)
1¾ cups buttermilk (plus more if needed)
½ cup raisins or currants (optional but traditional)
1 tablespoon butter, melted (for brushing after baking)


Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C)
Line a baking sheet with parchment paper and set aside

Step 2: Mix Dry Ingredients
In a large bowl, whisk together the flour, baking soda, salt, and sugar if using
Stir in raisins or currants if desired

Step 3: Add Buttermilk
Make a well in the center of the flour mixture
Pour in the buttermilk and gently stir until a shaggy dough forms
Add a splash more buttermilk if the dough feels too dry

Step 4: Shape the Dough
Turn the dough out onto a lightly floured surface
Knead just 5–6 times until it comes together—do not overwork it
