Ingredients
Scale
Pancakes:
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1 cup milk (or your preferred non-dairy alternative)
- 1/4 cup molasses
- 1 large egg
- 3 tablespoons melted butter (or vegetable oil)
- 1 teaspoon vanilla extract
Toppings:
- Warm maple syrup
- Whipped cream (optional)
- Powdered sugar (for dusting)
- Candied ginger or sprinkles (optional, for a festive touch)
Instructions
Step 1: Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
Step 2: Combine the Wet Ingredients
- In a separate bowl, mix the brown sugar, milk, molasses, egg, melted butter, and vanilla extract until smooth.
Step 3: Make the Batter
- Pour the wet ingredients into the dry ingredients and gently mix until combined. Do not overmix; a few lumps are fine.
Step 4: Cook the Pancakes
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
Step 5: Serve and Enjoy
- Stack the pancakes on a plate, drizzle generously with warm maple syrup, and add your favorite toppings.
Notes
- Use Fresh Spices: For the most vibrant flavor, make sure your spices aren’t stale.
- Don’t Overmix the Batter: Overmixing can lead to dense pancakes. Mix until just combined.
- Keep Pancakes Warm: Place cooked pancakes in a 200°F (93°C) oven while you finish the rest.
- Adjust Thickness: If the batter is too thick, add a splash of milk to reach your desired consistency.
