Ingredients

2 lbs baby gold or red potatoes, halved or quartered
1 packet (1 oz) French onion soup mix
2 tbsp olive oil
1 medium onion, thinly sliced
1 cup shredded Gruyère or Swiss cheese (or mozzarella for milder taste)
½ tsp garlic powder
¼ tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Optional: ¼ cup sour cream or plain Greek yogurt for serving


Instructions

Step 1: Preheat the Oven
Preheat oven to 400°F (200°C).
Grease a 9×13-inch baking dish or line a sheet pan with parchment paper.

Step 2: Toss the Potatoes
In a large bowl, toss potatoes with olive oil, French onion soup mix, garlic powder, black pepper, and sliced onion.
Make sure everything is evenly coated.

Step 3: Roast the Potatoes
Spread the seasoned potatoes in an even layer in your baking dish or on the sheet pan.
Bake for 35–40 minutes, stirring halfway through, until potatoes are tender and golden.

Step 4: Add the Cheese
Sprinkle the shredded cheese evenly over the hot potatoes.
Return to oven for 5–7 minutes, or until the cheese is melted and bubbly.

 

Step 5: Garnish and Serve
Remove from oven, sprinkle with fresh parsley, and serve warm.
Optional: Add a dollop of sour cream or Greek yogurt on the side.

Notes

Use Waxy Potatoes – Baby gold or red potatoes hold their shape and roast well
Don’t Skip the Onions – They caramelize and add extra flavor
Use Gruyère – It melts beautifully and adds classic French onion taste
Roast at High Heat – Ensures crisp edges and soft centers
