Ingredients

½ cup (1 stick) unsalted butter
¾ cup light brown sugar, packed
2 large eggs
1½ tsp vanilla extract
3 very ripe bananas, mashed (about 1½ cups)
1¾ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
¼ tsp ground cinnamon (optional)
2 tbsp granulated sugar (for topping)
Optional: ¼ cup white chocolate chips or chopped walnuts


Instructions

Step 1: Brown the Butter
In a small saucepan, melt butter over medium heat. Stir frequently as it foams and turns golden with brown specks at the bottom. Once it smells nutty and aromatic, remove from heat and cool for 5–10 minutes.

Step 2: Mix the Wet Ingredients
In a large mixing bowl, whisk together brown butter and brown sugar until combined. Add eggs, vanilla, and mashed bananas. Stir until smooth.

Step 3: Add the Dry Ingredients
Sift in flour, baking soda, baking powder, salt, and cinnamon (if using). Stir gently until just combined. Do not overmix.

Step 4: Pour and Top
Pour the batter into a greased or parchment-lined 9×5-inch loaf pan. Smooth the top and sprinkle with 2 tbsp granulated sugar for a sweet, crackly top.

 

Step 5: Bake
Preheat oven to 350°F (175°C). Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use Overripe Bananas – The spottier, the better for natural sweetness
Cool the Butter – Let brown butter cool slightly before mixing with eggs
Don’t Overmix – Mix until just combined for a tender crumb
Add Texture – Fold in nuts or white chocolate for extra flavor
