  • 3 large eggs, separated

  • ¼ tsp cream of tartar (helps stabilize the egg whites)

  • ¼ tsp salt

  • Optional: ½ tsp garlic powder or Italian herbs for savory version

  • Optional: 1 tsp honey or maple syrup for sweet version


Instructions

Step 1: Prep the Cottage Cheese

  1. For smooth cloud bread, blend the cottage cheese in a food processor or blender until creamy.

  2. If you like texture, you can skip this step and use it straight from the container.

Step 2: Separate and Whip the Egg Whites

  1. Carefully separate the egg whites into a clean, grease-free bowl. Place yolks in a separate bowl.

  2. Add cream of tartar to the egg whites.

  3. Beat with an electric mixer on high speed until stiff peaks form (about 3–4 minutes). Set aside.

Step 3: Mix the Yolks and Cheese

  1. To the egg yolks, add blended cottage cheese and salt.

  2. Mix well until smooth.

  3. Add optional herbs or sweetener depending on your desired flavor.

Step 4: Fold in the Egg Whites

  1. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it.

  2. Carefully fold in the remaining whites using a rubber spatula, being cautious not to deflate the mixture.

Step 5: Shape and Bake

  1. Preheat oven to 300°F (150°C).

  2. Line a baking sheet with parchment paper.

  3. Spoon the mixture into 6–8 round mounds (about ½-inch thick), spacing them apart.

  4. Bake for 25–30 minutes until golden and set.

  5. Let cool slightly before removing from the baking sheet.

Step 6: Serve and Enjoy

Notes

Use Room Temperature Eggs – They whip better and provide more volume.
