Ingredients
- All-Purpose Flour (1 ½ cups) – The base for fluffy pancakes.
- Baking Powder (2 tsp) – Helps the pancakes rise.
- Salt (¼ tsp) – Enhances all the flavors.
- Cinnamon (½ tsp, optional) – Adds warmth.
- Brown Sugar (¼ cup, packed) – For a rich, caramelized sweetness.
- Ripe Bananas (2, mashed) – The key to moist, flavorful pancakes.
- Egg (1 large) – Helps bind everything together.
- Milk (¾ cup, plus more if needed) – Keeps the batter smooth.
- Vanilla Extract (1 tsp) – Adds depth of flavor.
- Melted Butter (2 tbsp) – For richness and moisture.
- Vegetable Oil or Butter (for cooking) – To prevent sticking.
Instructions
Step 1: Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and brown sugar.
Step 2: Mash the Bananas & Mix the Wet Ingredients
In another bowl, mash the bananas until smooth. Add the egg, milk, vanilla extract, and melted butter. Stir until well combined.
Step 3: Combine the Batter
Pour the wet ingredients into the dry ingredients and gently mix. Don’t overmix—lumps are okay! If the batter is too thick, add a little more milk.
Step 4: Cook the Pancakes
Heat a non-stick pan or griddle over medium heat. Grease with butter or oil. Pour ¼ cup of batter per pancake and cook until bubbles form on the surface, about 2 minutes. Flip and cook for another 1–2 minutes until golden brown.
Step 5: Serve & Enjoy
Stack the pancakes and serve warm with syrup, sliced bananas, or a dusting of powdered sugar!
Notes
- Use Ripe Bananas – The riper, the sweeter!
- Don’t Overmix – Overmixing makes pancakes dense instead of fluffy.
- Medium Heat is Best – Too high, and they burn; too low, and they won’t cook through.
