Mushroom Stuffed Chicken Breast

  • 2 large chicken breasts (boneless, skinless)
  • 1 cup mushrooms (chopped, any variety)
  • ½ small onion (finely diced)
  • 2 cloves garlic (minced)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme (or Italian seasoning)
  • ½ cup shredded mozzarella cheese (or Swiss, gouda, or cheddar)
  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon paprika (for color and flavor)
  • Fresh parsley (for garnish, optional)

Instructions

Step 1: Prepare the Mushroom Filling

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.
  2. Add chopped mushrooms and onions, sauté until soft (about 5 minutes).
  3. Stir in garlic, salt, black pepper, and thyme, cooking for another 1-2 minutes.
  4. Remove from heat and mix in cream cheese and shredded mozzarella until creamy.

Step 2: Stuff the Chicken

  1. Slice each chicken breast lengthwise to create a pocket (don’t cut all the way through).
  2. Stuff each pocket with the mushroom mixture, securing with toothpicks if needed.
  3. Sprinkle paprika, salt, and black pepper on the outside for extra flavor.

Step 3: Cook the Chicken

  1. In the same skillet, melt butter over medium-high heat.
  2. Sear the stuffed chicken for 3-4 minutes per side until golden brown.
  3. Transfer the chicken to a baking dish and bake at 375°F (190°C) for 15-20 minutes until cooked through (internal temp 165°F/75°C).

Step 4: Serve & Enjoy

  1. Remove toothpicks and garnish with fresh parsley.
  2. Serve with roasted veggies, mashed potatoes, or a fresh salad.

Notes

Use Large Chicken Breasts – They’re easier to stuff and won’t dry out.
Sear First, Bake After – This locks in moisture while achieving a crispy crust.
Let It Rest – Let the chicken sit for 5 minutes after baking to keep it juicy.
Add More Cheese – For an extra cheesy bite, sprinkle shredded mozzarella on top before baking!
