Mushroom Stuffed Chicken Breast
- 2 large chicken breasts (boneless, skinless)
- 1 cup mushrooms (chopped, any variety)
- ½ small onion (finely diced)
- 2 cloves garlic (minced)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme (or Italian seasoning)
- ½ cup shredded mozzarella cheese (or Swiss, gouda, or cheddar)
- 2 tablespoons cream cheese (softened)
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ teaspoon paprika (for color and flavor)
- Fresh parsley (for garnish, optional)
Instructions
Step 1: Prepare the Mushroom Filling
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Add chopped mushrooms and onions, sauté until soft (about 5 minutes).
- Stir in garlic, salt, black pepper, and thyme, cooking for another 1-2 minutes.
- Remove from heat and mix in cream cheese and shredded mozzarella until creamy.
Step 2: Stuff the Chicken
- Slice each chicken breast lengthwise to create a pocket (don’t cut all the way through).
- Stuff each pocket with the mushroom mixture, securing with toothpicks if needed.
- Sprinkle paprika, salt, and black pepper on the outside for extra flavor.
Step 3: Cook the Chicken
- In the same skillet, melt butter over medium-high heat.
- Sear the stuffed chicken for 3-4 minutes per side until golden brown.
- Transfer the chicken to a baking dish and bake at 375°F (190°C) for 15-20 minutes until cooked through (internal temp 165°F/75°C).

- Remove toothpicks and garnish with fresh parsley.
