Ingredients

• 2 cups pecan halves (toasted for extra flavor)
• 1 (11 oz) bag caramel bits or 35 soft caramel candies (unwrapped)
• 2 tbsp heavy cream or evaporated milk
• 2 cups semi-sweet or milk chocolate chips
• 1 tsp coconut oil or vegetable shortening (for smoother chocolate, optional)
• Flaky sea salt (optional, for topping)


Instructions

Step 1: Prep the Slow Cooker
Line the bottom of your Crockpot with a piece of parchment paper or use a slow cooker liner to make cleanup easy.
Spread the pecan halves evenly across the bottom in a single layer.

Step 2: Add Caramel Layer
In a microwave-safe bowl or small saucepan, melt caramel bits with the heavy cream, stirring until smooth.
Drizzle the caramel evenly over the pecans in the Crockpot.
Alternatively, layer unwrapped caramels directly over the pecans if you prefer to melt in the slow cooker (see tip below).

Step 3: Add the Chocolate
Sprinkle the chocolate chips evenly over the caramel layer.
If using, dot the chocolate with coconut oil or shortening to help it melt smoothly.

Step 4: Cook on Low
Cover the Crockpot and cook on LOW for about 1.5 to 2 hours, or until everything is fully melted.
Check every 30 minutes to avoid burning, especially near the edges.

Step 5: Scoop and Set
Once melted, turn off the Crockpot and let the mixture cool slightly.
Using a spoon or small cookie scoop, drop spoonfuls of the turtle mixture onto a parchment-lined baking sheet or tray.
Sprinkle with flaky sea salt if using.

Step 6: Cool and Store
Let the turtles cool and set at room temperature for 1–2 hours, or refrigerate for quicker setting.
Once firm, store in an airtight container at room temperature for up to 1 week, or refrigerate for up to 2 weeks.

Notes

Toast Your Pecans – Lightly toasting them brings out more flavor.
Don’t Stir in the Crockpot – Let the layers melt slowly without mixing to keep the turtles neat.
Use a Cookie Scoop – Keeps portions uniform and makes scooping easier.
Line Everything – Parchment paper prevents sticking and simplifies cleanup.
Add a Holiday Twist – Sprinkle with crushed peppermint or drizzle with white chocolate for a festive look.
