For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup shredded unsweetened coconut
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)

For the Dipping Sauce (optional)

  • ½ cup sweet chili sauce
  • 1 tablespoon fresh lime juice

Instructions

Step 1: Prep the Shrimp

  1. Preheat your oven to 400°F (200°C) if you’re baking, or heat about 2 inches of oil in a frying pan for frying.
  2. In a shallow bowl, combine flour, salt, pepper, and garlic powder. In another shallow bowl, beat the eggs. In a third shallow bowl, mix the shredded coconut and panko breadcrumbs together.

Step 2: Dredge the Shrimp

  1. Coat each shrimp in the flour mixture, shaking off any excess.
  2. Dip the shrimp into the beaten egg, ensuring it’s fully coated.
  3. Finally, roll the shrimp in the coconut-breadcrumb mixture, pressing gently to help it stick.

Step 3: Cook the Shrimp

  1. For Baking: Place the shrimp on a baking sheet lined with parchment paper. Bake for 12-15 minutes, flipping halfway through, until the shrimp are golden and crispy.
  2. For Frying: Carefully place the shrimp into the hot oil and cook for 2-3 minutes per side or until golden brown. Transfer to a paper towel-lined plate to drain excess oil.

Step 4: Serve and Enjoy

  1. If desired, place the shrimp on a cooling rack to maintain crispiness.
  2. Serve the shrimp with a side of sweet chili sauce mixed with lime juice for dipping.

Notes

Use fresh shrimp – The fresher the shrimp, the better the flavor and texture.
Toast the coconut – If you prefer a deeper coconut flavor, toast the shredded coconut in a dry skillet over medium heat for 2-3 minutes before using it in the recipe.
Don’t overcrowd the pan – When frying, make sure not to overcrowd the shrimp. This ensures they cook evenly and stay crispy.
